Natale Marcattilii - maitre

Natale works alongside his brother Valentino by running the dining rooms at San Domenico. He manages the serving staff and service as well as welcoming the customers and advising them. In his words: "The customers who come to us want to feel good. We must look after them, right from their arrival at the restaurant through the whole time they spend here. We must be attentive and conscientious without ever becoming intrusive or overpowering. They are guests in our home and so we welcome them as guests rather than customers. The most important thing is that they feel perfectly at ease. A guest who does not feel comfortable will not come back."
